I have finished the body of my Newlyn Jacket, so I joined the shoulders and picked up stitches and worked the collar.

That is a whole heckuva lot of seed stitch! You pick up stitches around the neck edge and then work a series of short rows, then 4″ of fold-over seed stitch collar. I’m glad to have that done, so that once the sleeves are done, I just need to seam everything and wash!
